I Kind of figure I'll throw a post up that I'll try to keep up to date when I see that new "stable" releases of Bukkit have been pushed.

Latest version is actually named "craftbukkit-1.0.1-R1.jar"
According to Bukkit web site no plugins should be broken assuming the plugin developers have been keeping up with Bukkit development and modifications. Also according to Bukkit web site and devs yet another new release may be coming out very soon (note the R1 essentially indicating this is a "release client").
Hope to see the hosted servers here at NFO updated soon, thanks guys you're always awesome.
Note: I will attempt to keep this post (and this thread) updated as new releases push through so as to keep everyone here at NFO up to date on the current version of bukkit.

I've been updating our Bukkit autoinstaller daily to the latest snapshots and updated it to this RB earlier tonight. I'll be continuing to keep an eye on it.
As far as the other plugins, I'll be reviewing those, as well, and updating them as needed. I'll also be looking into further autoinstallers once things have finished settling down and entered maintenance mode.

If you have spare time, you can look at bukkituptodate and see if you can incorporate it into your panels to autoupdate plugins.

It automatically downloads zipped plugins in an update folder, and you manually have to unzip and move it, but maybe you can create something yourself where it checks the plugin versions, and if needed captures the update from the feed, and download and installs it automatically.
