What linux os would you guys recommend to use? Is debian and ubuntu the same? Do all your os's perform the same without compiling? what os you guys use for the single servers at nfo?

Debian and Ubuntu are similar, but Debian supports Xen better and its latest version works on Xen HVM (what we use here) whereas Ubuntu is broken. Because of its Xen support and general ease of use, I generally recommend going with Debian.

Internally, we use Gentoo, but it's not a distro that I recommend for those who aren't already familiar with Linux or who don't have a solid amount of time on their hands to get things going.

Squeeze is the latest version and generally the best choice.
