How do I know if our servers are protected form being DDOSed?

Servers can't in general be protected from DDoS (Distributed Denial of Service) attacks because these typically involve bandwidth exhaustion and need to be handled on a case-by case basis, in a reactive manner.

Were you thinking of regular DoS or exploit-based attacks? If so, I'd need to know more about the type of server that you have.

With a Ventrilo server, I haven't seen any solid evidence of available exploits, so you'd most likely just be looking at a standard bandwidth-exhaustion-based attack.
