On a clean install with all updates what is the best route to go to trim down anything that could cause lag on a game server.

What services should be turned off and so on, the reason I ask is we are getting Lag spikes, sometimes they are 30 minutes apart and sometimes only a minute apart.

And the resources are fine only using around 10 to 15 % cpu and have 700meg of memory available.

To tighten security and increase performance, you should move remote desktop port to a different one and stop the "lanmanserver" (aka "Server") service -- those are the big ones.

What application are you running that you can see spikes in? This might also have a different cause.
